We started in Old Salem, an historic district of Winston-Salem, NC. Costumed docents performed period crafts. Two bakers were making the sugar cake that we sampled with our coffee. Her job was to knead pockets into the dough to hold the sugar. There were some anachronisms, such as the plastic bucket holding the brown sugar in the lower right.
